Jalapeño Popper Stuffed Shrimp

Directions

  1. 1Prepare the shrimp by butterflying them and setting them aside.
  2. 2Cut the stem off the jalapeños, cut them in half, and remove the seeds using a spoon.
  3. 3Dice the jalapeños into small pieces.
  4. 4In a bowl, combine cream cheese, red hot sauce, diced jalapeños, bacon bits, and cheddar cheese.
  5. 5Add seasoning to the mixture.
  6. 6Mix all ingredients thoroughly with your hands until well combined.
  7. 7Take a portion of the mixture and flatten it in your hand.
  8. 8Place a butterflied shrimp in the center of the flattened mixture.
  9. 9Form the mixture around the shrimp, leaving the tail exposed, to create a ball.
  10. 10Prepare a breading station with three separate trays: one with all-purpose flour mixed with seasoning, one with egg wash, and one with cornmeal mix.
  11. 11Dredge each shrimp ball in the seasoned flour, ensuring it's fully coated.
  12. 12Dip the floured shrimp ball into the egg wash, allowing any excess to drip off.
  13. 13Finally, coat the shrimp ball in the cornmeal mix, pressing gently to ensure a good crust.
  14. 14Deep-fry the coated shrimp balls in hot oil until golden brown and crispy.
  15. 15Remove the fried shrimp from the oil using tongs and place them on a plate.
  16. 16Serve the Jalapeño Popper Stuffed Shrimp with your favorite dipping sauce.
