Remove the chicken meat from the rotisserie chicken and shred it into pieces, storing it in glass containers.

Place the remaining chicken bones and skin into a pot.

Add water to the pot to cover the chicken bones.

Place the pot on the stove and turn on the burner to begin heating the water.

Cut the white onions in half and slice the ginger into pieces.

Place the cut onions and ginger on a baking sheet with a cooling rack.

Roast the onions and ginger in the oven at 350 degrees Fahrenheit for 10 minutes.

Once roasted, add the onions and ginger to the pot with the chicken bones.

Add one packet of chicken bouillon powder to the pot.

Chop the green onions.

Add the chopped green onions, a pho spice bag, and a box of chicken broth to the pot.

Add rice noodles to the boiling water.

Tips
This is a perfect way to use the bones from a Costco rotisserie chicken.
To speed up the cooking process, the onions and ginger can be roasted in an oven.
For the best flavor, use chicken broth as the base for the soup.
Sriracha and hoisin sauce can be added to taste.
