Directions
- 1Preheat oven to 425F
- 2In a mixing bowl, add chopped yellow potatoes, drizzle with olive oil and season with Lawrys.
- 3Add potatoes to one side of a foil-lined sheet pan.
- 4In a large mixing bowl, combine 1 lb lean ground beef, 1/4 cup breadcrumbs, 1 egg, 1/4 cup ketchup or barbecue sauce, and 1/2 chopped white onion.
- 5Season the meat mixture with garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and pepper.
- 6Mix well using your hands.
- 7Form the mixture into individual loaves and place them on the sheet pan with potatoes.
- 8Bake for 25 minutes.
- 9After 15 minutes, move the potatoes and add broccoli that has been drizzled with olive oil and seasoned with salt and pepper.
- 10Continue baking until the internal temperature of the meatloaves reaches 160F.
- 11Meanwhile, prepare the glaze by combining 1/4 cup ketchup or barbecue sauce, 1 tablespoon brown sugar, and 1 teaspoon apple cider vinegar.
- 12Once cooked, brush the glaze over the meatloaves.
