Chocolate Chip Cookies

Directions
- 1Melt the butter about halfway in a bowl and stir until completely melted.
- 2Add both sugars to the melted butter and whisk for about a minute.
- 3Add egg yolk, vanilla paste, and heavy cream and whisk for another minute.
- 4Add the all-purpose flour, baking soda, and salt and gently fold with a spoon or spatula.
- 5Mix in the bittersweet chocolate.
- 6Place the dough in the fridge to chill.
- 7Scoop about 50 grams of dough per cookie and place on a baking sheet.
- 8Bake in a 350 degree convection oven.
- 9Slam the tray halfway through the bake and again at the end to create the ripples.
- 10Let the cookies rest on the pan.
- 11Sprinkle the cookies with sea salt flakes and move to a wire rack to finish cooling.

- 70 g white sugar
- 1 whole egg yolk
- 15 g heavy cream
- 5 g vanilla paste
- 140 g all-purpose flour
- 2 g salt
- 2 g baking soda
- 140 g bittersweet chocolate
- sea salt flakes (optional)
