1In a bowl, combine 420g of chicken wings, 1 tsp of garlic, 1/2 tsp of salt, and 1/8 tsp of black pepper.
2In another bowl, mix together 3/4 cup of all-purpose flour, 1 tbsp of cornstarch, 1/2 tsp of salt, 1/4 tsp of baking powder, 1/2 tsp of onion powder, 1/4 tsp of garlic powder, 1/4 tsp of ginger powder, 1/4 tsp of paprika, 1/4 tsp of nutmeg, 1/4 tsp of black pepper, and 1/4 tsp of sugar. Add cayenne pepper to taste.
3Add 4 tbsp of batter and 1/3 cup of water to the flour mixture.
4Dip the chicken wings in the batter, then dredge them in the flour mixture until fully coated.
5Heat 2 quarts of oil in a frying pan over high heat.
6Fry the chicken wings for 8-10 minutes, or until golden brown and cooked through.
