Caramelized Onion & Garlic Spaghetti

Directions

  1. 1Heat butter and olive oil in a large skillet over medium heat.
  2. 2Add in the thinly sliced onions and let them caramelize for 15-20 minutes, stirring occasionally, until golden and jammy.
  3. 3While onions are caramelizing, boil a pot of salted water and cook spaghetti until al dente.
  4. 4Drain the pasta, reserving some of the pasta water.
  5. 5Once onions are deeply golden, stir in minced garlic and seasonings (paprika, garlic powder, salt, pepper, Italian seasoning).
  6. 6Let it bloom for a minute, then add chili crisp and sauté for another minute.
  7. 7Pour in the heavy cream and let it simmer for a few minutes.
  8. 8Add the grated Parmesan cheese to the sauce.
  9. 9Add the cooked spaghetti to the sauce and toss to coat, using reserved pasta water to loosen if needed.

Tips

  • If the onions start sticking, hit 'em with a splash of water.
  • Save some pasta water to loosen things up if the sauce is too thick.
