Cauliflower au Poivre

Directions

  1. 1Place the whole cauliflower head in a baking dish, drizzle with olive oil, and season with salt.
  2. 2Cover the cauliflower with parchment paper and tin foil, and bake in a 400°F oven.
  3. 3In a pan, melt butter, add pepper, thyme, and rosemary, and let the spices bloom.
  4. 4Add chopped onion to the pan and coat with the fat.
  5. 5Add brandy to the onion mixture.
  6. 6Stir in garlic and mushroom better than bouillon.
  7. 7Add heavy cream to the mixture and stir well.
  8. 8Bring the sauce to a boil and remove from heat.
  9. 9Remove the cauliflower from the oven, pour the sauce over it, and place back in a 375°F oven.
  10. 10Baste the cauliflower with the sauce every 12 to 15 minutes while it bakes.
  11. 11Once finished, spoon additional sauce over the cauliflower and garnish with finely chopped parsley.

Tips

  • Baste the cauliflower every 12 to 15 minutes during the final bake to build up flavor.
