Directions

Place the whole cauliflower head in a baking dish, drizzle with olive oil, and season with salt.

Cover the cauliflower with parchment paper and tin foil, and bake in a 400°F oven.

In a pan, melt butter, add pepper, thyme, and rosemary, and let the spices bloom.

Add chopped onion to the pan and coat with the fat.

Add brandy to the onion mixture.

Stir in garlic and mushroom better than bouillon.

Add heavy cream to the mixture and stir well.

Bring the sauce to a boil and remove from heat.

Remove the cauliflower from the oven, pour the sauce over it, and place back in a 375°F oven.

Baste the cauliflower with the sauce every 12 to 15 minutes while it bakes.

Once finished, spoon additional sauce over the cauliflower and garnish with finely chopped parsley.

Tips
