Preheat oven to 350°F.

Liberally salt and flour the short ribs.

Sear all sides of the ribs in hot oil for 2-3 minutes, then remove them from the pot.

Chop the onion, celery, and carrots.

Add the chopped onion, celery, carrots, and halved garlic bulb to the pot and sauté.

Pour in red wine and beef broth.

Add brown sugar, herbs (rosemary), and peppercorns, then simmer.

Return the ribs to the pot, cover, and bake for 3 hours, checking that the meat falls off the bone.

Prepare broccolini by seasoning it with olive oil and salt.

Prepare mashed potatoes by boiling and cutting potatoes, then mashing them with butter and milk.

Strain the liquid from the pot and reduce it for 20 minutes.

Whisk in butter to the reduced liquid to create a sauce.

Serve the braised short ribs over mashed potatoes and broccolini, drizzled with the sauce.
