Directions

  1. 1Mix all the seasoning blend ingredients in a bowl.
  2. 2To a separate bowl, add butter, chopped parsley, rosemary, thyme, garlic, and 4 tablespoons of the seasoning blend, then mix.
  3. 3Separate the skin from the breast and legs of the turkey.
  4. 4Stuff the butter mixture under the skin of the turkey.
  5. 5Brush the remaining butter mixture on the outside of the turkey.
  6. 6Add a little oil and rub it all over the turkey.
  7. 7Use the rest of the seasoning blend to season the turkey, ensuring to cover the bottom as well.
  8. 8Stuff the inside of the turkey with aromatics.
  9. 9Place the turkey in a pan over a bed of celery, carrots, onion, potatoes, thyme, sage, rosemary, whole lemon, and head of garlic.
  10. 10Cover the pan with foil.
  11. 11Add the turkey to the oven at 350°F (175°C) and let it cook for 2 hours and 25 minutes or until the breast hits 145F.
  12. 12Remove the foil and baste the turkey with its juices.
  13. 13Put the turkey back in the oven at 450°F (230°C) for 30 minutes to get some color, or until the breast hits 150F.
  14. 14Remove the turkey from the oven and let it rest for 20-25 minutes.
  15. 15Carve the turkey.

  • 3 Celery
  • 3 Carrots
  • 1 Large Yellow Onion
  • 2 Lbs Petite Potatoes (Red & Gold)
  • 3 Sprigs Thyme
  • 1 Sprig Sage
  • 2 Sprigs Rosemary
  • 1 Whole Lemon
  • 1 Head Garlic
