One Pot Creamy Peri Peri Chicken Pasta

Directions

  1. 1Start off with a splash of olive oil in a pan.
  2. 2Add some chicken thighs to the pan.
  3. 3Season the chicken with a small pinch of salt and black pepper.
  4. 4Add onion powder, garlic powder, smoked paprika, cayenne pepper, and peri peri seasoning to the chicken.
  5. 5Stir everything together to coat the chicken.
  6. 6Squeeze some fresh lemon juice over the chicken.
  7. 7Once cooked, remove the chicken from the pan.
  8. 8Add a splash more olive oil to the pan.
  9. 9Add some diced red onion to the pan.
  10. 10Add a bunch of minced garlic to the pan.
  11. 11Add some diced bell peppers to the pan.
  12. 12Add cumin powder, coriander powder, peri peri seasoning, turmeric, and paprika to the pan.
  13. 13Stir all the spices and vegetables together.
  14. 14Crank up the heat and add a splash of water to deglaze the pan.
  15. 15Add finely chopped tomatoes to the mixture.
  16. 16Add dried oregano.
  17. 17Add two tablespoons of peri peri sauce to the pan.
  18. 18Stir everything together.
  19. 19Pour in some vegetable stock.
  20. 20Add 250ml of double cream to the sauce.
  21. 21Once the sauce is bubbling, add 400g of pasta.
  22. 22Let the pasta simmer for about 10-12 minutes on a medium-high heat.
  23. 23Add all of the cooked chicken back into the pasta.
  24. 24Stir to combine the chicken with the pasta.
  25. 25Grate some hard cheese (if you have it) over the pasta.
  26. 26Add a bit of mozzarella cheese to the pasta.
  27. 27Garnish with some fresh parsley.
