Directions

Combine marinade ingredients and marinate beef for approximately 15 minutes while prepping other ingredients.

Cook noodles according to package instructions.

Drain and rinse noodles with water, then let them drain until ready to use.

Heat 2 tbsp avocado oil over high heat.

Cook onion and mushrooms together until softened, about 5 minutes over medium heat.

Season onions and mushrooms with salt and pepper.

Set the cooked onions and mushrooms aside in a large bowl.

Add carrots and red bell pepper to the pan.

Add oil to the pan and cook for a couple of minutes until softened.

Season carrots and bell pepper with salt, pepper, and 1 tbsp sesame oil.

Add spinach to the pan until wilted.

Add the cooked spinach to the bowl with the cooked onions and mushrooms.

Cook beef in the pan until cooked through, which takes approximately 5 minutes.

Set the cooked beef aside and add it to the veggies.

Pour sauce ingredients into the pan over medium heat.

Cook the sauce for about 1 minute.

Add the noodles to the pan with the sauce and toss well.

Turn the heat to low and add in all the veggies and meat.

Toss well to combine all ingredients.

Season with sesame seeds, sesame oil, and pepper as needed.

Top with green onions.

Ingredients
1 lb thinly sliced steak
2 tbsp soy sauce
1 tbsp sesame oil
2 tbsp cane sugar
2 garlic cloves minced
0.25 tsp black pepper
8 oz sweet potato noodles
4 tbsp neutral oil like avocado oil
Salt
pepper
1 onion, thinly sliced
3 carrots, peeled and cut into thin matchsticks
1 bell pepper, thinly sliced
1 package cremini mushrooms, stems removed, thinly sliced
3 cups green onions, chopped
3 cups baby spinach
Sesame seeds
0.25 cup soy sauce
2 tsp sugar or honey
3 garlic, finely minced
1 tbsp sesame oil
0.5 tsp salt
0.25 tsp black pepper
Tips
You can get stir fry beef at Trader Joe's for the thinly sliced steak.
Sweet potato noodles can be found at Asian markets or in the Asian section of stores.
Season with sesame seeds, sesame oil, and pepper as needed at the end.
Top with green onions before serving.
