Directions

  1. 1Peel, wash, and check the ridge gourd for bitterness, then cut into small pieces.
  2. 2Heat oil in a kadhai over medium heat.
  3. 3Add the prepared ridge gourd to the pan.
  4. 4Add salt and turmeric powder, stir well, cover, and cook.
  5. 5Increase heat to dry up the excess liquid released by the vegetable if desired.
  6. 6Add red chilli powder, coriander powder, and roasted cumin powder, and mix well.
  7. 7Stir in the ghee before turning off the heat.

  • 1 kg turai (ridge gourd)
  • 2-3 tbsp oil
  • to taste salt
  • to taste turmeric powder
  • 2 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp roasted cumin seeds powder
  • 1 tbsp ghee

Tips

  • Check ridge gourd for bitterness before cooking; if bitter, do not use.
  • Ridge gourd peel can be saved, salted, and fried to make a crispy side dish for dal rice.
  • You can add black pepper powder as a substitute or addition to the red chilli powder.
  • Serve with hot rotis.
