1Blend onions finely in a food processor, or chop finely with a knife if a food processor is not available.
2Add chili powder, paprika, salt, pepper, and olive oil to the blended onions.
3Add chicken thigh mince to the mixture and blend everything together until well combined.
4Take a spoonful of the chicken mixture and place it between two layers of baking paper.
5Roll the chicken mixture as thin as possible using a rolling pin.
6Roll the flattened chicken into a log shape within the baking paper.
7Place the rolled chicken doner in an air fryer and air fry for at least 10 minutes at 180 degrees Celsius.
8Spread garlic mayo on a wrap.
9Add shredded lettuce, tomatoes, sumac onions (red onions with sumac and lemon juice), Swedish salad (pickled cucumber), and chili peppers to the wrap.
10Unwrap the cooked chicken doner and place it on top of the vegetables in the wrap.
11Add more garlic sauce on top of the chicken.
12Roll the wrap tightly.
13Toast the chicken doner wrap in a hot pan for a couple of minutes on each side until golden brown.

Tips
Chicken thigh mince is used as it's fattier and has more flavor than chicken breast, which might not hold together as well and is drier.
