Directions
- 1Season the chicken with Sazon, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper.
- 2Add olive oil to the chicken and mix well.
- 3Set the seasoned chicken aside.
- 4Dice onions and bell peppers.
- 5Mince garlic.
- 6Heat oil in a pot.
- 7Add the chicken to the pot and sear until most of the way cooked through.
- 8Remove the chicken from the pot.
- 9Add sofrito to the pot and let it cook down for a few minutes.
- 10Season with cumin, oregano, and smoked paprika.
- 11Sauté the diced onions and peppers for a few minutes.
- 12Add minced garlic and sauté until fragrant.
- 13Pour in tomato sauce and let it cook for a few minutes.
- 14Add washed rice to the pot and mix.
- 15Add olives, chicken bouillon, and Sazon.
- 16Pour in water and bring to a simmer.
- 17Add a few cilantro stems and bay leaves.
- 18Add the chicken back to the pot.
- 19Cover and let cook for about 20 minutes.
- 20Steam for 10 minutes.
- 21Remove the chicken and fluff the rice.
