Directions

  1. 1Place eggplants, garlic, and red peppers in a baking dish. Drizzle with olive oil and season with salt and pepper.
  2. 2Bake until softened.
  3. 3Peel and chop the eggplants.
  4. 4Chop the red peppers.
  5. 5Combine the chopped eggplant and red peppers in a bowl.
  6. 6Add the roasted garlic cloves, chickpeas, parsley, and more olive oil to the bowl.
  7. 7Season with salt and pepper and mix well.
  8. 8Serve with bread.

  • 2 eggplant
  • 2 heads garlic
  • 2 red pepper
  • 1 bottle olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 can chickpeas
  • 1 handful parsley
  • 1 pinch red pepper flakes
