Directions

  1. 1Bring a large pot of salted water to a boil. Cook the orzo according to package directions until al dente.
  2. 2Drain and rinse the orzo under cold water to stop the cooking. Let cool completely.
  3. 3In a large mixing bowl, combine the cooled orzo, chickpeas, spinach, cucumber, tomatoes, red onion, cranberries, feta, parsley, and mint.
  4. 4In a small bowl or jar, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, honey, garlic, oregano, salt, and pepper.
  5. 5Pour the dressing over the salad and toss gently until everything is evenly coated.
  6. 6Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  7. 7Toss again before serving and adjust seasoning if needed.
