1Cut the onions from the bottom all the way back up to the root, slice as thin as you like.
2Separate the onions from each other by giving it a gentle toss with your fingers and put in a container.
3In a pot add two cups of red wine vinegar, one cup of plain water, one to two bay leaves, three cloves of fresh garlic, peppercorns and one to two tablespoons of sugar.
4Bring the mixture to a boil.
5Pour the boiling mixture over the red onions.
6Fill to the top, cover with a little bit of cheesecloth or a basic paper towel.
7Put in the fridge for a couple of hours or overnight to absorb all the flavor.
