Preheat your oven to 200c, fan setting.

Cut tofu into cubes and add to a mixing bowl with tamari, olive oil, garlic powder, smoked paprika, maple syrup, and salt.

Toss well to combine, then sprinkle cornstarch and gently fold through.

Add to a baking tray and bake for 12 minutes on the top rack.

Cook pasta one minute less than instructions, reserving pasta water.

Fry garlic in olive oil for one minute on low heat, then add frozen peas and cooked pasta.

Mix pasta water with miso, then pour into the pan.

Add nutritional yeast and gently stir to emulsify.

Top with baked tofu, divide into bowls, and top with black pepper, more olive oil, and chilli flakes if desired.

300 g extra firm tofu
2 tbsp tamari or soy sauce
1 tbsp extra virgin olive oil
0.5 tbsp maple syrup
2 tsp smoked paprika
1 tsp garlic powder
2 tbsp cornstarch
4 cloves crushed garlic
200 g frozen peas
200 g dried pasta of choice, cooked
1 tbsp white miso paste
80 ml salty pasta water
3 tbsp nutritional yeast
0 black pepper
0 chilli flakes
