Tomato Cucumber Mozzarella Salad

Directions

  1. 1Start by cutting your cherry tomatoes. Place them between two plastic lids and slice through with a serrated knife.
  2. 2Slice your fresh cucumber into bite-sized pieces.
  3. 3Add the cut cucumbers to the bowl with the tomatoes.
  4. 4Chop your avocado. Cut it in half, then into quarters to remove the pit, and peel off the skin.
  5. 5Chop the avocado into bite-sized pieces and add it to the bowl.
  6. 6Add fresh mozzarella pearls to the bowl.
  7. 7Chop fresh basil by stacking it up, rolling it into a log, and thinly slicing it into ribbons.
  8. 8Add the chopped basil to the salad.
  9. 9For the dressing, combine olive oil, balsamic vinegar, salt, pepper, and pressed garlic in a separate bowl.
  10. 10Drizzle the dressing over your salad.
  11. 11Gently toss the salad to combine, making sure every bite is coated with the dressing.
