1Mix 2 tbsp active dry yeast with 1/2 cup warm water in a small bowl and let it sit for 10 minutes.
2Combine 2 cups hot water, 1 tbsp + 1 tsp honey, 5 tbsp melted butter, 1 tbsp salt, and 3 cups flour in a stand mixer. Add the yeast mixture and mix well.
3Using the dough hook, add 3 more cups of flour, one cup at a time, and mix for 5 minutes until smooth.
4Turn off the mixer, leave the dough hook in, and let the dough rest for 10 minutes. Turn the mixer back on for 10 seconds to deflate the dough. Repeat this process 5 more times for a total of 1 hour rising, deflating every 10 minutes.
5Place the dough on a floured surface, divide it in half, and shape it into 2 loaves. Place them on a parchment-lined pan.
6Let the loaves rise for 30 minutes. After 10 minutes, gently score the tops.
7Brush the loaves with 1 beaten egg.
8Bake at 375°F for 20-25 minutes, until golden brown.
