Crispy chipotle beef tacos with chipotle lime crema

Directions

  1. 1Combine salt, pepper, paprika, garlic powder, onion powder, cumin, chili powder, and oregano in a bowl to make the taco seasoning.
  2. 2Heat clarified butter in a pan, add onion, and sauté until fragrant.
  3. 3Add minced beef to the pan and cook until it changes color.
  4. 4Mix in minced garlic, taco seasoning, tomato paste, and chipotle peppers, sautéing for 2-3 minutes.
  5. 5Add water and cook until the beef is fully cooked and the water has evaporated.
  6. 6Combine mayonnaise, sour cream, buttermilk, chopped chipotle peppers, taco seasoning, lime juice, and dried parsley in a bowl and mix until smooth.
  7. 7Heat oil in a pan, place a tortilla inside, add shredded cheese and the beef mixture, then fold the tortilla in half.
  8. 8Cook until the tortilla is crispy and golden.

  • 1-2 tbsp chipotle pepper in adobo sauce, roughly chopped
  • 1/2 cup water
  • 1 tbsp garlic, minced
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1/3 cup buttermilk
  • 1-2 whole lime
  • 1 tbsp taco seasoning
  • 2 tsp chipotle peppers in adobo sauce
  • 1 tbsp dried parsley
  • 12-15 whole mini flour tortillas
  • whole oil (optional)
  • 1 cup mozzarella cheese, shredded
