Directions

  1. 1Take the oxtail pieces and season them with salt and lime.
  2. 2Add oxtail seasoning, browning sauce, garlic paste, and green seasoning to the oxtail.
  3. 3Mix all the ingredients well by hand to ensure the oxtail is fully coated.
  4. 4Slice scotch bonnet peppers and ginger.
  5. 5Place the sliced peppers and ginger on a baking rack and put them in the oven to roast.
  6. 6Add the roasted peppers and ginger, along with thyme, chili flakes, and allspice berries, to a pot with water.
  7. 7Cook the mixture in the pot on the stove.
  8. 8Prepare pizza dough by mixing flour and water in a bowl.
  9. 9Knead the dough on a floured surface.
  10. 10Form the dough into a ball, place it in a container, and cover it to proof.
  11. 11Place the seasoned oxtail in a pot on the stove and sear it.
  12. 12Add chopped vegetables, the cooked sauce from the roasted peppers and ginger, and more water to the pot with the oxtail.
  13. 13Let the oxtail braise until tender.
  14. 14Once the oxtail is cooked, remove the meat from the bones and shred it.
  15. 15In a bowl, combine ketchup, the reduced oxtail cooking juices, San Marzano tomatoes, chili flakes, dried oregano, and salt.
  16. 16Mix the sauce ingredients thoroughly.
  17. 17Flatten the pizza dough onto a pizza pan.
  18. 18Spread the prepared tomato and oxtail juice sauce over the pizza dough.
  19. 19Sprinkle fresh herbs over the sauce.
  20. 20Top the pizza with the shredded oxtail and then with grated cheese.
  21. 21Bake the pizza in a Ninja Woodfire oven.
  22. 22Once baked, remove the pizza from the oven.
  23. 23Garnish with more fresh herbs and a drizzle of hot honey.
  24. 24Slice and serve the oxtail pizza.

  • The longer you let your dough cold proof, the better the flavor development.
  • A pizza like this needs a little bit of balance from the tomato sauce; using straight up oxtail cooking gravy just creates something that isn't really that balanced or popping.
