2Grate or finely cube 1 cup of cold butter.
3Add the grated butter, 1 1/2 cups of light brown sugar, and 1/2 cup of white sugar to a mixing bowl.
4Mix the butter and sugars for 4 to 5 minutes until fully incorporated. Make sure to scrape down the sides and bottom of the bowl.
5Add 2 cold eggs and 1-2 teaspoons of vanilla extract to the mixture.
6Mix for about 2 minutes until the eggs are completely incorporated and the mixture is smooth and creamy. Once again, scrape down the sides of the bowl.
7In a separate bowl, combine 1 1/2 cups of cake flour, 1 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of baking soda. Mix these dry ingredients together.
8Slowly add the dry ingredients to the wet mixture. Mix until just a little bit of flour is still visible; do not overmix.
9Add 2 cups of chocolate chips (milk chocolate, semi-sweet, or butterscotch) to the dough and mix for about 30 seconds until the flour disappears.
10Roll the cookie dough into 1/3-cup-sized balls.
11Bake the cookies at 375 degrees Fahrenheit for 14 to 16 minutes. Bake 4-6 cookies per sheet at a time.
12While the cookies are still warm from the oven, use a glass or jar to shape them into perfect rounds and fluff them up.

Tips
You definitely want the butter to be cold.
You have to use cake flour.
Do not overmix the flour.
When the cookies come out of the oven, use a glass or jar to fluff them up into a cookie swirl while they are still warm.
