1Season 2 pounds of cubed chicken breast with salt, black pepper, garlic powder, and paprika, then mix until well coated.
2Add the chicken breast to a pan over medium heat, spread it out, and cook for about 5 to 7 minutes until nearly done.
3Just before the chicken is done, add one large diced shallot and 3 teaspoons of minced garlic.
4Keep cooking for another 1 to 2 minutes until nice and fragrant.
5Add 2 and 1/2 cups of dry orzo and toast it until it has a nice light toast.
6Add in 6 cups of chicken broth and 3 cups of peas and carrots.
7Bring the mixture to a light simmer, then throw your lid on.
8Cook for about 10 to 12 minutes until the orzo has absorbed the chicken broth and is tender.
9Add the zest of two lemons and the juice of those lemons.
10Add one block of reduced-fat cream cheese and 2 cups of shredded parmesan.
11Stir until the cheese is melted and you have a nice little cream sauce.
12Divide the prepared meal into seven meal prep containers.
