Sardine Sandwich (The Monterey)

Directions

  1. 1Start by opening one can of sardines.
  2. 2Gently split the sardines open and remove the spine.
  3. 3Combine English cucumbers, red onions, fresh dill, capers, and a little caper liquid.
  4. 4Add lots of lemon juice, the oil from the sardine tin, a touch of extra virgin olive oil, and a pinch of salt to the vegetable mixture.
  5. 5Toss all the ingredients together and let them sit for a second so the flavors can mix.
  6. 6Spread a little mayo on toasted ciabatta bread.
  7. 7Place some wild arugula on the bottom of the ciabatta to soak up the juice.
  8. 8Evenly spread the sardine mixture on top of the arugula.
  9. 9Add the marinated vegetables on top of the sardines.

  • oil from the tin of the sardine

  • 1 pinch salt
  • toasted ciabatta
  • mayo
  • wild arugula

Tips
