Directions

  1. 1Use a glass bowl and a knife to cut a circular shape out of the Coulommiers cheese.
  2. 2Place the cheese on a sheet of puff pastry.
  3. 3Cut the center out of the Coulommiers cheese.
  4. 4Fold the puff pastry up around the cheese.
  5. 5Brush the pastry with egg yolk.
  6. 6Fill the hollowed-out cheese with diced potato.
  7. 7Add pieces of cheese on top of the potato.
  8. 8Sprinkle diced red onion over the cheese.
  9. 9Create a lattice pattern with bacon strips on a flat surface covered with plastic wrap.
  10. 10Cover the cheese and pastry with the bacon lattice.
  11. 11Transfer the entire assembly to a baking sheet lined with parchment paper.
  12. 12Bake in the oven at 360°F (180°C) for 15 minutes.
  13. 13Remove from the oven and serve.
