Directions

  1. 1Start with 2 cups of self-rising flour and 1/4 teaspoon baking soda.
  2. 2Add 7 tablespoons cold, sliced butter and cut it in using a pastry blender until crumbly.
  3. 3Make a well, pour in cold buttermilk, and stir with a fork until shaggy.
  4. 4Transfer to a floured surface, press into a rectangle, and fold in thirds.
  5. 5Dust with flour as needed.
  6. 6Roll to 1/2 inch thick.
  7. 7Add shredded cheddar and chopped green onions.
  8. 8Fold again, press, and repeat with more cheese and onions.
  9. 9Fold one last time and roll out.
  10. 10Cut biscuits with a round cutter and place on a parchment-lined tray.
  11. 11Brush tops with buttermilk and add more cheddar.
  12. 12Bake at 400 degrees Fahrenheit for 20 minutes.
