1Season thin slices of chicken with grated garlic, soy sauce, mirin, oyster sauce, white pepper, and corn starch. Mix well.
2Make the sauce using two tablespoons of soy sauce, two tablespoons of dark soy sauce, two tablespoons of oyster sauce, two tablespoons of water, and two tablespoons of sugar. Add a small cornstarch slurry to thicken.
3Add oil to a skillet and begin cooking the chicken until browned and fully cooked.
4Remove the chicken from the pan.
5Boil the lo mein noodles, then strain and rinse in cool water.
6Sauté carrots, red bell pepper, and cabbage until soft.
7Add mushrooms, green onion, and garlic. Sauté for a few more minutes.
8Add back in the chicken and the noodles.
9Pour over the sauce and sauté everything together on high heat until everything is coated in the rich and savory sauce.
