Combine flour, salt, sugar, yeast, butter, milk, and vanilla in a bowl.

Mix with a spatula until it’s a dough and then knead it using a mixer or your hands for 5-8 minutes.

Cover the bowl with a piece of clingfilm and let it proof for 2 hours or until it has doubled in size.

Move the dough to a floured working surface and flatten it to about 1.5/2cm thick.

Cut them into your desired shapes, using an empty pickle jar and a large piping tip for doughnut shapes.

Transfer them onto a lined baking tray and let them rest for 20 minutes.

Pre-heat the oven to 180°C.

Bake the doughnuts for 10-15 minutes, until they look golden brown.

Dip them into a bowl of melted butter and then into a bowl of sugar to give it a nice sugary coating.

Leave them to cool completely.

To fill, put your filling in a piping bag with any metal tip.

Cut through the center of the doughnut without piercing the back, wiggling the knife back and forth to make sure there’s space all around.

Pipe in the filling, stopping when you feel the filling push back to ensure you don’t overfill.

230 g Plain Flour (AP flour)
1 tsp Salt
35 g White Sugar
1 pack Instant Yeast
30 ml Melted Unsalted Butter
160 ml Milk (milk alternatives work too)
1 tbsp Vanilla Extract
Bowl melted butter
Bowl Granulated Sugar
Filling for the doughnut (jam, custard, etc…)

Tips
The dough is quite sticky so using a mixer may be easier for kneading.
To fill donuts, cut through the center without piercing the back and wiggle the knife to make space before piping.
