Combine the two flours, salt, cheddar cheese, Parmesan cheese, and onion in a bowl and mix.

Add the buttermilk and bicarb soda straight into the bowl.

Bring the ingredients together until all the flour is incorporated and the mixture has a consistent dough.

Lightly dust a surface with flour, turn the dough a couple of times, and shape it into a round using the heel of your palm.

Place the dough on a baking tray dusted with a little flour, flatten the top slightly, and dust the top with a little more flour.

Cut straight through the top of the dough to the bottom of the tray.

Optionally, throw a little Parmesan cheese in the groove.

Bake at a high temperature, about 200 degrees Celsius, for about 20-25 minutes until golden brown.

Tips
If you don't like cheddar, you can use blue cheese and walnuts.
The base recipe is flour, bicarb soda, salt, and buttermilk.
