1Start with red garnet sweet potatoes, cutting them lengthwise. Make sure the surface is smooth.
2Rinse the sweet potato halves and pat them dry really well.
3Place the sweet potatoes on a baking sheet lined with parchment paper.
4Lightly brush the sweet potatoes with a neutral oil, such as olive oil.
5Sprinkle a pinch of coarse salt on the sweet potatoes.
6Flip the sweet potatoes over onto the parchment paper.
7Bake them in the oven at 400°F (200°C) uncovered for about 40 minutes or until desired doneness (tender when poked with a knife or fork from the back).
8In the meantime, roughly chop some pecans to go on top of the potatoes at the end.
9Once the sweet potatoes are ready, flip them over on the same pan.
10Lightly dust the sweet potatoes with a little bit of cinnamon.
11Put an even layer of raw cane sugar (or brown sugar/sugar in the raw) across all of the sweet potatoes, ensuring it's enough to create a crust but not too thick.
12Place the sweet potatoes back in the oven under the broiler on high until the sugar gets crispy and starts to bubble. Watch closely to prevent burning.
13Top with honey cinnamon butter and some of the chopped pecans.
