Directions

  1. 1Cut rib eye into thin strips.
  2. 2Add cornstarch and baking soda to the beef to help keep it moist and soak up all the sauce.
  3. 3Add neutral oil and soy sauce to the beef.
  4. 4Mix well and let it marinate.
  5. 5Chop garlic.
  6. 6Separate the gai lan greens from the stems and then cut them into smaller pieces.
  7. 7Add some white pepper and garlic powder to the meat.
  8. 8Mix well.
  9. 9Start your sauce with soy, dark soy for color, fish sauce, oyster sauce, vinegar, sugar, chicken bouillon powder, and white pepper.

  11. 11Add beef into a hot wok with some oil, spread it into a flat layer and sauté aggressively.
  12. 12Remove the beef.
  13. 13Add in the gai lan stems and let them get a nice char.
  14. 14Add in your garlic and sauté some fragrant.

  16. 16Pour your sauce right on top.

  18. 18Push all the noodles to the side and crack in two eggs, give it a scramble on the side and once they're almost cooked toss them in with the noodles.

  20. 20Let that come together about a minute or so, and finish with just a drizzle of sesame oil.
  21. 21Top with green onion.
