Directions

  1. 1Place salmon steaks on a tray.
  2. 2Make a sauce in a saucepan with soy sauce, mirin, oyster sauce, and rice vinegar.
  3. 3Boil the sauce and add cornstarch.
  4. 4Cook linguine in boiling water with salt and save some of the cooking water.
  5. 5Cook the salmon skin-side down in a pan with olive oil.
  6. 6Brown all sides except the skin side.
  7. 7Set the salmon aside and coat the top of the salmon with the glaze.
  8. 8To make a glaze, heat grapeseed oil with butter and finely mince a clove of garlic.
  9. 9Lightly brown the garlic and, using the pasta water, start a glazing.
  10. 10Add pasta to the glazing.
  11. 11Chop cilantro.
  12. 12Place the salmon in the oven at 210 degrees to caramelize.
  13. 13Place a nest of pasta on a plate.
  14. 14Top the pasta with cilantro, salmon, and a little lime zest.

Tips

  • If you don't like cilantro, you can use parsley or chives
