In a bowl, add Chinese cooking wine, dark soy sauce, ground white pepper, oyster sauce, toasted sesame oil and cornstarch then whisk together.

Boil noodles according to package.

Drain and rinse noodles with water to remove excess starch.

Add vegetable oil in a wok, then swirl around the pan and heat over medium high.

Pour out oil, give wok a good wipe with a paper towel and then lightly season.

Add more vegetable oil, heat over medium high.

Add green onions, celery ribs and julienned carrots to pan.

Sautee all together.

Remove all the vegetables and place in a bowl to the side.

Add more vegetable oil, and then chopped garlic and stir in the pan constantly until it begins to turn golden brown.

Add the vegetable and stir until all the ingredients are together.

Add noodle to the wok, sautee and stir

Add the sauce and water then continue stirring for 30 seconds.

Add bean sprouts and stir for another 30 seconds

Cut off the heat, add the very finely chopped garlic and toss together to give fresh spicy garlic flavor.

Get a nice bowl and plate all of it.

Optionally finish with some thinly sliced green onion.

1 Celery ribs
1 large Carrot
3 cups Green cabbage
3.5 tablespoons Vegetable oil
4 Garlic cloves
1 cup Bean sprouts
2 Garlic cloves
8 oz Chow Mein Noodles

Tips
Finely chop the cabbage.
Ensure to cut off the heat when adding the final 2 cloves of garlic to prevent burning.
Adding chili can make the recipe better.
