Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes depending on how small they are cut.

Drain and mash the potatoes or press them through a ricer.

Add the warmed heavy cream and butter to the mashed potatoes and mix until smooth, then season with salt.

Season chicken thighs on both sides with garlic powder, paprika, dried thyme, seasoning salt, and black pepper.

Cook the chicken thighs in a skillet with olive oil and butter until completely cooked through and golden and crisp on the outside.

Remove the cooked chicken from the pan.

Add butter and olive oil to the same skillet, then add the sliced onions and a pinch of salt to caramelize.

Add balsamic vinegar and fresh thyme to the caramelized onions and continue cooking until deeply caramelized.

Add minced garlic to the onions and cook for 1 minute.

Sprinkle flour over the onions and stir for 30 seconds.

Pour in beef broth and Worcestershire sauce, stir, and simmer for 2-3 minutes until slightly thickened. Season with salt and black pepper.

Nestle the chicken back into the sauce and spoon sauce over the top.

Top the chicken with shredded Gruyère cheese, cover with a lid, and allow the cheese to melt for a couple of minutes.

Remove from heat and garnish with chopped parsley.

Tips
For mashed potatoes, use a mesh strainer for a creamy texture.
The caramelizing of onions takes about 40 minutes, but the flavor will be amazing.
