Directions
- 1Peel and cut the potatoes into chunks and put them in a bowl of water to prevent browning.
- 2Mince the garlic and chop onion and celery. Mix dry seasoning together in a separate bowl.
- 3Grate the cheddar and gouda cheese.
- 4In a pot, cook the bacon until the fat is rendered. Remove bacon but leave grease in pot.
- 5Add 3 tbsp butter to the pot.
- 6Add half the seasoning.
- 7Add the onions and celery.
- 8Add the broccoli and 2 tbsp butter, stir and cook until onions are translucent. Add garlic and cook 2 more minutes
- 9Add the flour and stir immediately to prevent burning.
- 10Add the chicken stock.
- 11Mix well, until all flour lumps are gone.
- 12Add milk and heavy cream.
- 13Add potatoes and the rest of the seasoning.
- 14Bring to a boil, then mash the potatoes partially for a chunky consistency.
- 15Add the cooked bacon and cheeses.
- 16Serve in bowls, top with sour cream, bacon bits, and chives.

- 1 head garlic

- 1 8 oz mild cheddar cheese
- 1 8 oz smoked gouda cheese
- 1 Pound bacon
- 5 tablespoons butter
- 5 tablespoons flour
- 3 cups chicken stock
- 2 cups milk
- 1 cup heavy cream
- 1 tablespoon sour cream
- 1 pinch chives
- 1 Tsp Salt
- 0.5 Tsp black pepper
- 1 Tsp garlic powder
- 1 Tsp smoked paprika
- 1 Tsp onion powder
- 0.5 Tsp Cayenne
- 1 Tsp dry thyme
- 3 Ribs of celery diced
