Grab your diced chicken breast, add the seasonings (onion powder, garlic powder, thyme, oregano, smoked paprika, chili powder, and salt) with a bit of olive oil, mix it, and set it aside.
To a pan on medium heat, add diced onion and cook until it gets some color.
Add the chicken to the pan and let it cook for 4 minutes on each side.
While the chicken is cooking, start cooking your penne pasta in boiling water.
Once the chicken is nearly cooked, add diced garlic, tomato purée, chicken stock, and light cream cheese.
Mix it all together until it becomes smooth and creamy.
Add the cooked and drained pasta with a bit of pasta water.
Mix it together with some dried parsley and simmer on low heat for a few minutes.
Top it off with some Parmesan and more parsley.
Divide the pasta into 4 equal servings and enjoy.
