Prepare your vegetables, such as onions, garlic, carrots, and gailan.

Add your choice of thinly sliced protein and cook it.

Quickly blanch the udon noodles.

Combine dark soy sauce, soy sauce, oyster sauce, mirin, sugar/honey, and a splash of rice vinegar to make the sauce.

Add the blanched udon noodles to the stir-fry with the cooked protein and vegetables.

Pour the prepared sauce over the stir-fry.

Toss to combine all ingredients and enjoy.

Serve with bonito flakes, togarashi, or eat alone.
Ingredients
2 packs udon noodles
1 carrot
2 cups cabbage or leafy green
0.5 onion
3 cloves garlic, minced
protein (shabu shabu pork / beef)
1.5 tbsp dark soy sauce
1 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp mirin
2 tsp sugar/honey
splash rice vinegar
bonito flakes
togarashi
Tips
Use whatever vegetables are in your fridge that need to be utilized.
Quickly blanch udon noodles before adding them to the stir-fry.
Mix the sauce ahead of time and set aside until ready to use.
