1Combine white onions, garlic cloves, cilantro, one can of chipotle peppers, lime juice, orange juice, chili powder, cumin, oregano, black pepper, and honey in a blender. Blend everything together.
2Take 40 ounces of lean steak and poke some holes in it.
3Put the steak in a bag with the marinade and let it sit for at least 30 minutes (overnight recommended).
4Cook the marinated steak on high heat, let it rest for a few minutes, then dice into small pieces.
5Assemble the quesadillas with a low calorie tortilla, fat free mozzarella, carne asada, diced onions, and cilantro.
6Toast the quesadillas until they are golden brown on both sides. If meal prepping, wrap in aluminum foil and store in the freezer for up to three months.
