Directions

  1. 1Lightly toast the walnuts in a dry pan or oven until golden brown, then allow them to cool slightly and chop finely.
  2. 2In a mixing bowl, combine the chopped walnuts with the finely chopped parsley, coriander, and grated garlic.
  3. 3Pour in the red wine vinegar, honey, and olive oil, and mix the ingredients well.
  4. 4Add salt and black pepper to taste, adjusting until the flavours are balanced, adding a little more honey if desired.
  5. 5Let the gremo rest before serving.

  • 100 g walnut, toasted and finely chopped
  • 1 small bunch parsley, finely chopped
  • 1 small bunch coriander, finely chopped
  • 1 whole garlic clove, finely grated
  • 2 tbsp red wine vinegar
  • 2 tbsp honey
  • 120 ml olive oil
  • salt (optional)
  • black pepper (optional)

Tips

  • You can toast the walnuts for 3 to 5 minutes.
  • Use a little more olive oil if needed.
  • Adjust the sweetness by adding more honey if you like.
