Cut up the beef filet into 1 inch pieces.

Rub down the beef pieces with your favorite beef rub.

Put a slice of jalapeno on 2 opposite sides of each piece of steak and wrap in a half slice of bacon.

Lightly season the steak bites with your favorite bbq rub.

Pop the steak bites in the air fryer at 400°F degrees for 12 minutes.

While the air fryer is going, heat 1 stick of butter in a pan over low heat.

Once almost melted, add the rest of the ingredients for the jalapeño Cowboy butter and mix until fully incorporated.

Set the Cowboy butter aside.

When the time is up on the steak bites, give them a flip and cook until the bacon is done to your liking (another 5 minutes or so).

Dip the steak bites in the cowboy butter.
Ingredients
4 Beef Filet’s
Beef Rub
1 lb bacon
2 jalapeños, sliced
1 stick butter
2 tbs fresh parsley
0.5 jalapeno, minced
1 tbs fresh chives
0.5 tsp fresh thyme
1 to 2 cloves garlic
Big squeeze Lemon
1 tsp Dijon
0.5 tsp chili flakes
4 shakes Worcestershire
Cowboy Candy Seasoning by @spiceology

Tips
Lightly season with your favorite bbq rub before air frying.
Cook until the bacon is done to your liking.
