2Break cauliflower into florets, place in a lined baking tray with oil, salt, and pepper. Roast for 30 minutes.
3Melt butter in a pot, add flour and mix to make a roux. Cook for 1 minute on medium heat. Add optional ingredients (garlic, mustard, cloves) at this stage.
4Gradually add milk while whisking to thicken the sauce.
5Once the sauce has thickened, add grated cheddar cheese.
6Add roasted cauliflower to the cheese sauce and mix.
7Transfer the mixture into an ovenproof dish.
8Sprinkle parmesan over the top (optional).
9Bake in the oven at 200 degrees for 30-40 minutes.
