1Add 1 teaspoon of instant dry yeast, 1 cup of warm water, 2 tablespoons of sugar, 1 teaspoon of salt, 2 tablespoons of plain Greek yogurt and 1 large egg to a mixing bowl.
2Mix until combined and the egg yolk is broken up.
3Gradually add in 2 1/2 to 3 cups of all-purpose flour, stirring until it's too difficult to stir with a spoon.
4Scrape off most of the dough from the spoon and start kneading the dough with your hands.
5The dough should be soft, smooth and tacky, but not sticky enough to stick to your hands.
6Lightly grease another clean bowl, add in the dough, and roll it around a little to coat it.
7Cover the bowl with a tea towel or plastic wrap and let it rise until it's approximately double in size, which will take about 1 hour.
8Once risen, remove the dough from the bowl and divide it into 8 equal pieces.
9Take each piece and gently roll it into a small dough ball.
10Loosely cover the dough balls with plastic wrap and let them rise for another 30 minutes.
11When ready to cook, take each dough ball and roll it out into a teardrop or circular shape, making it pretty flat, just a fraction of an inch thick.
12Place the rolled-out dough onto a hot skillet on the stove that's been heated over high heat.
13Brush some melted butter over the top of the dough.
14Once bubbles start to appear, flip the naan to cook the other side.
15Brush the other side with a little melted butter.
16Once one side is flat with a golden brown color and the other side has deep golden brown almost black pockets where the bubbles formed, remove the naan from the skillet.
17Continue cooking the remaining dough, one at a time, or more if using multiple skillets or a grill.
18While one is cooking, roll out the next one so everything is ready to go.
