Directions

  1. 1Clean and rinse the lemons.
  2. 2Grate lemon zest and rub it together with the sugar.
  3. 3In a mixer bowl, add the cubed butter, granulated sugar, brown sugar, and vanilla extract.
  4. 4Add dry ingredients in small batches, mixing on low speed.
  5. 5Add lemon chips.
  6. 6Scrape the bottom of the bowl and the attachment periodically.
  7. 7Add eggs.
  8. 8Roll the cookie dough into 6 ounce balls.
  9. 9Split each ball open and push the sides together before chilling.
  10. 10Place baking sheet on top of another baking sheet.
  11. 11Bake the cookies.

  • 1 cup lemon chips
  • 116.1 g all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 lemon
  • 1 cup granulated sugar
  • 51.5 g brown sugar
  • 1 cup cubed butter
  • 1 teaspoon vanilla extract
  • 2 eggs
