200 g freshly shredded cheese
1 ball fresh mozzarella
1 large handful Fresh parsley and coriander
100 g butter
4 tbsp plain flour
4 cups whole milk
salt
pepper
1 tiny pinch nutmeg

For fresh lasagna sheets, bake uncovered at 180°C for 20-25 minutes.
For dry lasagna sheets, cover with foil for the first 25 minutes to prevent sticking, then remove foil and bake for another 10-15 minutes.
Let the lasagna rest for 15-20 minutes before serving to keep the layers intact.
To prevent a "gamey" smell from minced meat, sear it on high heat until it develops a crust before breaking it up, and then add tomato paste and salt.
