1Mix pork, 2 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 teaspoons of sugar, 2 teaspoons of cornstarch, 1 teaspoon of pepper, 2 tablespoons of chives or green onions, 2 teaspoons of fresh ginger and 1 teaspoon of minced garlic.
2Mix the stuffing with a whisk or by hand.
3Moisten paper towel or linen to keep the dough moist. Put the dough in a plate.
4Whisk an egg with a little water to help stick the dough.
5Place dough squares on the plate, covered with parchment.
6Place a teaspoon of stuffing in the center of each dough.
7Brush all around the dough with the egg mixture.
8Fold the dough. Each one has its own technique. Fold the opposite corners together to form a square.
9When everything is ready, freeze 1 hour on a plate so that it does not stick together. Then transfer to a ziploc in the freezer.
10Boil the dough for 3 to 4 minutes without thawing.
11Taste the dough and transfer it to your broth, you could also decorate your soup with a little green onion.
