In a pan, sauté garlic, spring onions, chillies, and chilli garlic sauce.

Add coriander, mixed vegetables (bell peppers, beans, corn), Rajma, salt, pepper, and lime zest to the pan and toss.

Add cooked rice to the pan and toss to combine, creating Mexican rice.

In another pan, sauté garlic.

Add lots of vegetables (carrots, baby corn, bell peppers, broccoli) to the pan.

Add spices and herbs (chilli flakes, paprika powder, oregano, cumin powder), salt, and pepper.

Add ketchup, chilli sauce, and tomato sauce.

Add two cheese slices and mix well until melted.

If desired, add cut paneer cubes to the saucy vegetables and mix.

Assemble the dish by spreading a layer of Mexican rice in a deep dish.

Spoon the saucy vegetables into the center of the rice layer.

Spread another layer of rice over the vegetables.

Pour cheese sauce over the rice.

Bake the assembled dish until the cheese is melted and golden brown.

Top the baked dish with nachos, more cheese sauce, spring onions, and corn.

4 cups Cooked rice
2 tsp Oil
5 Cloves of garlic
1 Spring onion
2 Chillies
1 tbsp Chopped Coriander
1 tbsp My Chilli Garlic Sauce
1 cup Veggies (bell peppers, beans, corn)
1 cup Cooked Rajma (Pinto beans are better)
0.5 Zest of lime
Salt
Pepper
5 Cloves of Garlic
1 big bowl Veggies (carrots, baby corn, bell peppers, broccoli)
1 tsp Chilli Flakes
1 tsp Paprika Powder
0.5 tsp Oregano
0.5 tsp Cumin Powder
1 tbsp Ketchup
1 tbsp Chilli Sauce
1 cup Tomato Sauce (It is onion, garlic & tomato sauteed & pureed)
2 Cheese Slices
0.5 cup Paneer cubes
4 Cheese cubes
Milk
Nachos
Corn
