Mexican Hot Pot

Directions

  1. 1In a pan, sauté garlic, spring onions, chillies, and chilli garlic sauce.
  2. 2Add coriander, mixed vegetables (bell peppers, beans, corn), Rajma, salt, pepper, and lime zest to the pan and toss.
  3. 3Add cooked rice to the pan and toss to combine, creating Mexican rice.
  4. 4In another pan, sauté garlic.
  5. 5Add lots of vegetables (carrots, baby corn, bell peppers, broccoli) to the pan.
  6. 6Add spices and herbs (chilli flakes, paprika powder, oregano, cumin powder), salt, and pepper.
  7. 7Add ketchup, chilli sauce, and tomato sauce.
  8. 8Add two cheese slices and mix well until melted.
  9. 9If desired, add cut paneer cubes to the saucy vegetables and mix.
  10. 10Assemble the dish by spreading a layer of Mexican rice in a deep dish.
  11. 11Spoon the saucy vegetables into the center of the rice layer.
  12. 12Spread another layer of rice over the vegetables.
  13. 13Pour cheese sauce over the rice.
  14. 14Bake the assembled dish until the cheese is melted and golden brown.
  15. 15Top the baked dish with nachos, more cheese sauce, spring onions, and corn.

  • 4 cups Cooked rice
  • 2 tsp Oil
  • 5 Cloves of garlic
  • 1 Spring onion
  • 2 Chillies
  • 1 tbsp Chopped Coriander
  • 1 tbsp My Chilli Garlic Sauce
  • 1 cup Veggies (bell peppers, beans, corn)
  • 1 cup Cooked Rajma (Pinto beans are better)
  • 0.5 Zest of lime
  • Salt
  • Pepper
  • 5 Cloves of Garlic
  • 1 big bowl Veggies (carrots, baby corn, bell peppers, broccoli)
  • 1 tsp Chilli Flakes
  • 1 tsp Paprika Powder
  • 0.5 tsp Oregano
  • 0.5 tsp Cumin Powder
  • 1 tbsp Ketchup
  • 1 tbsp Chilli Sauce
  • 1 cup Tomato Sauce (It is onion, garlic & tomato sauteed & pureed)
  • 2 Cheese Slices
  • 0.5 cup Paneer cubes
  • 4 Cheese cubes
  • Milk
  • Nachos
  • Corn
  • Spring Onions

Tips

  • You can assemble and keep it ready. Simply put the nachos and additional cheese sauce right before serving.
