1Combine apples, sugar, cinnamon, cornflour and water in a medium saucepan. Heat on medium heat for 5-6 minutes until apples soften and the liquid thickens. Set aside to cool.
2Preheat oven to 170°C Fan. Line and lightly grease a square baking dish.
3Mix together milk and vinegar, set aside for 10 minutes. Once thickened, pour into a large mixing bowl and add remaining wet ingredients.
4Sift dry ingredients into the wet ingredients. Gently mix until just combined.
5Spread 1/2 of the cake batter in the prepared pan. Top with the apple mixture. Then top with 2/3 of the brown sugar and cinnamon mixture.
6Cover with remaining batter and sprinkle the remaining 1/3 of brown sugar all over the top.
7Bake 35-40 minutes, or until the centre of the cake is set.
8When cake has a few minutes left, prepare the glaze by mixing powdered sugar, milk, and vanilla until smooth.
9When cake is done, let cool for 10 minutes, then poke holes into the cake.
10Pour glaze over cake, spreading to cover completely.
11Let glaze set for about 20 minutes before serving.
