Directions

  1. 1Dice three yellow onions.
  2. 2Cook onions over medium-high heat until all water has evaporated and they begin to brown and stick to the pan.
  3. 3Deglaze with small amounts of beef bone broth, stirring and boiling until the liquid is completely reduced, repeating until 16oz of bone broth has been reduced into the onions.
  4. 4Add a dash of soy sauce for extra flavor and color to the caramelized onions.
  5. 5Add 48oz of 93% lean ground beef to the same pan.
  6. 6Add 6 tsp coarse salt, 4 tsp onion powder, 4 tsp garlic powder, 4 tsp black pepper, 4 tsp oregano, and 2 tsp cumin to the ground beef.
  7. 7Add a 14.5oz can of fire-roasted diced tomatoes and half of the bone broth caramelized onions to the beef mixture.
  8. 8Add 200g of 2% cheddar and 200g of fat-free cheddar to the mixture.
  9. 9Mix until the cheese is melted and combined.
  10. 10Toss the beef mixture in the fridge for a few minutes to let it thicken up.
  11. 11Prepare the low-calorie caramelized onion burger sauce by combining 120g light mayo, 120g plain Greek yogurt, 100g sugar-free ketchup, 4 tsp sweet relish, and the other half of the caramelized onions.
  12. 12Season the sauce with garlic, pepper, and salt to taste.
  13. 13Mix the burger sauce ingredients until completely smooth.
  14. 14Assemble the burritos by spreading the burger sauce on a tortilla.
  15. 15Add a portion of the beef mixture to the tortilla.
  16. 16Fold the sides of the tortilla over the filling.
  17. 17Roll the tortilla tightly to form a burrito.
  18. 18Repeat the assembly process for 14 tortillas.
  19. 19Store the finished burritos frozen.

Tips

  • Place meat mixture in a bowl and refrigerate for ~20 minutes to help it thicken and make rolling burritos easier.
  • When transferring meat mixture to a bowl to refrigerate, weigh the filling to easily make perfectly evenly sized burritos by dividing the total weight by 14.
  • To reheat: remove from freezer, wrap in a paper towel, microwave for 2 minutes to defrost, then air fry at 375 for 6-8 minutes to crisp up your tortilla.
