1Marinate the chicken: Mix salt, pepper, garlic powder, cumin, red chili powder, turmeric, parsley, oregano, yogurt, tomato paste, red pepper paste, lemon juice, and olive oil. Add chicken and mix well. Marinate for at least 30 minutes.
2Cook the chicken: Heat a large skillet over medium-high heat. Add olive oil and cook the chicken until browned and cooked through.
3Make the garlic sauce: Mix mayonnaise, sour cream, garlic, water, parsley, salt, garlic powder, black pepper, and lemon juice. Refrigerate until ready to use.
4Make the sumac onions: Mix sliced red onion, parsley, lemon juice, and sumac.
5Make the red sauce: Heat a small pan over medium heat. Add olive oil, tomato paste, red pepper paste, salt, oregano, cumin, paprika, and water. Cook until thickened.
6Assemble the shawarma: Spread red sauce on the pita bread, add chicken, pickled cucumbers, diced tomatoes, red sauce, and sumac onions. Roll and repeat.
7Bake: Add red sauce to a baking tray, spread evenly. Place the assembled shawarma on the tray, add more sauce on top, and bake at 400°F until the cheese is melted and golden brown.
